Chickpeas may have got me through university intact. So healthy, so easy. (Part of my exam super-food plan, which included salmon, spinach and blueberries. And white chocolate Magnums… I did pass, in the end!?)
- chickpeas tossed with olive oil, black pepper and grapefruit segments
- blend with yoghurt and lemon for simple houmous, add harissa or thyme for extra depth
- roast with chili, black pepper and rough sea salt for better-than-crisps
- mix with baked-soft aubergine for instant filling curry
Yum, yum, yum and yum 🙂 I gotta try those roasted fellas! Is there any oil involved or just the seasonings you mention?
Just enough olive oil to make the seasonings stick (heh) but experiment and see!
